INGREDIENTS :

  • 3 cups Quinoa, sprouted (soaked 2 hours, rinsed 2 times daily till separated, drained after each rinsing)
  • 4 cups Parsley, finely chopped
  • 1 Onion, medium, finely chopped
  • 4 tomatoes, medium, chopped
  • 1 cup Mint, fresh, finely chopped (if dried mint, use 1/4C.)
  • ½ head Romaine lettuce, finely chopped

PROCEDURE :

  • Pulse ingredients until rice consistency

VARIATIONS :

  • Use Parsnip celeriac, jicama instead of cauliflower
  • Use peeled almonds, coconut meat or pilinuts instead
  • Add various ingredients for flavoured rice
  • For sushi rice add: 1/4 cup Rice Vinegar, 1-2 T Honey, 1 teaspoon salt
